Steps
5 Steps
  1. Prep mushrooms: Cut or tear the mushrooms into bite-sized pieces.
  2. Blanch & drain: Blanch the mushrooms in boiling water for 1–2 minutes until cooked. Drain well and squeeze out as much moisture as possible to prevent a soggy salad.
  3. Season: Place the mushrooms in a mixing bowl. Add the toasted rice powder, chili flakes, lime juice, soy sauce (or fish sauce), and sugar. Toss to combine, then taste and adjust.
  4. Mix in herbs: Add the sliced shallots, green onion, and culantro. Gently toss everything together.
  5. Serve: Transfer to a plate, top with fresh mint leaves, and serve immediately!
💡
Cooking Tip
  • Freshly toasted rice powder: Toasting glutinous rice with kaffir lime leaves and chopped galangal before grinding will elevate the salad with an incredible, fresh aroma compared to store-bought toasted rice powder.
  • Control moisture: Mushrooms absorb a lot of water. Press them down with a spoon or squeeze them using cheesecloth after blanching. Removing excess liquid prevents the dressing from becoming diluted and watery.
  • Textural variety: Use a combination of mushroom varieties. Combining king oyster mushrooms (chewy, meat-like texture) with wood ear mushrooms (crunchy bite) adds a fun dynamic to every bite.
  • Add toasted rice last: If not serving immediately, hold off on adding the toasted rice powder until right before serving so it doesn't soak up all the dressing and lose its crunch.
