Steps
10 Steps
Pork Skewers:

  1. Prep & Marinate: Slice the pork into bite-sized strips. Add the pounded garlic, turmeric powder, cumin powder, curry powder, sugar, pounded coriander seeds, coconut milk, and a splash of milk. Mix until well combined and the pork is moist but not overly soggy. Marinate for half a day.
  2. Skewing: Thread the marinated pork onto bamboo skewers.
  3. Grill: Before grilling, dip the pork skewers thoroughly in coconut milk. While grilling over the heat, brush additional coconut milk onto the pork repeatedly as it cooks to keep it tender and juicy.
  4. Serve: Grill until fully cooked, then transfer to a plate and serve with the peanut sauce and cucumber relish.

Peanut Sauce:

  1. Simmer Curry Base: Add a portion of coconut cream to a pot over medium heat and warm through. Stir in the Massaman curry paste, then pour in the rest of the coconut milk.

  2. Season: Add palm sugar (start with 3 ladles to avoid oversweetening; adjust later if needed). Add tamarind paste, keeping the sourness minimal (this sauce should be sweet-forward with almost no noticeable tartness). Season with a pinch of salt. Stir well to combine.
  3. Thicken & Finish: Add the ground roasted peanuts (start with 5 ladles; the sauce will naturally thicken further as it cools). Simmer until the sauce comes to a boil, then remove from heat.

Cucumber Relish (Ajad):

  1. Make Syrup: Combine the vinegar, sugar, salt, and a splash of water in a pot. Simmer over heat until slightly thickened (aim for a flavor profile that is pleasantly sour first, followed closely by sweet, with a subtle hint of salt). Let cool completely.
  2. Assemble: Combine the sliced cucumbers, red chilies, and shallots in a bowl, then pour the cooled syrup over the fresh vegetables.

Serve: Plate the grilled pork satay alongside crispy toasted bread, peanut sauce, and cucumber relish.

Cooking Tip
The Marinated Pork:

  • Cut: Pork loin or neck yields the best balance of tenderness. Slice into uniform, bite-sized strips.
  • Marinade: Turmeric gives the signature golden color, while cumin, coriander seeds, and coconut milk keep the meat flavorful and tender.
  • Grilling: Grill over charcoal using medium heat, brushing continuously with coconut milk to lock in moisture and prevent drying out.
  • The Satay Peanut Sauce:
  • A rich, aromatic sauce with a sweet, savory, and mildly spiced profile.
  • Fine ground roasted peanuts simmered with Massaman curry paste, coconut milk, and palm sugar create the signature velvety texture and glossy oil separation.

Cucumber Relish (Ajad):

  • Essential side dish that cuts through the rich, savory depth of the pork and peanut sauce.
  • Freshly diced cucumber, sliced shallots, and red chilies steep in a bright, sweet-and-sour vinegar syrup.

Toasted Bread:

  • Thickly sliced white bread toasted until crispy on the outside and soft inside. Perfect for mopping up leftover peanut sauce or pairing directly with the pork skewers.
