1. Main Ingredient: White Rice (Jasmine Rice/White Rice)

Cooked rice is made from the grains of Asian rice (Oryza sativa), which are milled to remove the husk and outer layers, leaving white rice grains. The type of rice commonly eaten in Thailand is non-glutinous rice, which has the following characteristics:

Main component: Rice consists primarily of starch, which is made up of:

Amylose: Typically accounts for about 15–30% of non-glutinous rice. When cooked, higher amylose content generally produces rice with firmer, more separate grains.

Amylopectin: Contributes to the soft and slightly sticky texture of cooked rice.

Common rice varieties:

Thai Jasmine Rice: One of the most popular varieties in Thailand, known for its distinctive fragrant aroma and long, slender grains. When cooked, it has a soft, fluffy texture and pleasant fragrance due to its relatively low amylose content.

White Rice / Sao Hai Rice: Generally produces firmer, more separate grains and is suitable for fried rice and many stir-fried dishes because the grains are less likely to become mushy.

2. How Rice Becomes "Cooked Rice"

"Cooked rice" refers to raw rice that has been cooked with heat and water. Scientifically, this process involves starch gelatinization:

Cooking: When rice grains are heated with water, the starch absorbs water and swells. A common starting point is approximately 1 part rice to 1–1.5 parts water, although the amount varies depending on the rice variety and cooking method.

Changes during cooking: The starch structure changes as it absorbs water and heat, causing the rice grains to expand and become soft and tender.

3. Characteristics and Uses

Source of energy: Cooked rice is primarily a source of carbohydrates, which provide energy for the body.

Taste and texture: Cooked rice has a mild, neutral flavor and a characteristic aroma, especially when made with Thai jasmine rice. It is typically soft and tender while retaining its individual grain structure, making it suitable for pairing with a wide variety of savory dishes.

Common uses: Cooked rice is commonly served with curries, stir-fries, grilled or fried dishes. It is also used as a main ingredient in dishes such as fried rice and rice porridge. Glutinous rice, however, is used for desserts such as mango sticky rice and is a different type of rice from regular cooked rice.

Tip: For softer and more fragrant rice, allow the rice to rest in the rice cooker for about 10–15 minutes after cooking. Then gently fluff the rice before serving.
